Best Chicken Marsala Recipes

 This isn't your typical Italian chicken marsala. Rather, it's an Italian American dish, created in the new country by immigrants trying to imitate their favorite dishes. Chicken was used to make scallops, or scaloppine, which are "thin cuts of meat," because lamb and hog weren't easily accessible.

Ingredients:

  1. 2 (6-ounce) boneless, skinless chicken breasts (or 4 chicken breast cutlets)
  2. Salt and freshly ground black pepper, to taste
  3. 1/4 cup plus 1 tablespoon all-purpose flour, divided
  4. 3 tablespoons extra virgin olive oil, divided
  5. 2 tablespoons unsalted butter, divided
  6. 8 ounces cremini or button mushrooms, cleaned and thinly sliced
  7. 2 cloves garlic, minced
  8. 2/3 cup dry Marsala wine
  9. 2/3 cup low-sodium chicken broth or water
  10. 2 sprigs fresh thyme (or 1/4 teaspoon dried thyme leaves)
  11. 1 tablespoon finely chopped parsley, optional, for garnish


Instructions:

Step:No:01

Get the chicken ready by:
Wet the chicken with paper towels and pat dry. Cut each breast in half lengthwise to create four cutlets out of chicken breast. Using a meat mallet or rolling pin, place between two large pieces of parchment paper and gently pound to 1/4-inch thickness. (If you're using cutlets, skip this step.)
Take off the top parchment sheet and place the chicken on the bottom sheet on a large baking sheet.

Step:No:02

 Dredge the chicken by seasoning it with pepper and salt. Take a shallow bowl and add 1/4 cup flour. Distribute and lightly sprinkle each chicken cutlet with flour on both sides. After removing any excess, move to a fresh parchment sheet. The parchment covered in flour should be rolled up and thrown aside.

Step:No:03

Prepare the chicken:
Place a sizable pan, such as a 12-inch cast-iron skillet, over medium-high heat. Add one tablespoon of butter and two teaspoons of oil.
Add the chicken cutlets to the pan in a single layer after the butter has melted. Stir and continue cooking for a further 4 minutes after flipping, or until golden brown. Move to a platter and cover with aluminum foil.

Step:No:04

 Cook the veggies and prepare the sauce: Add the mushrooms and the remaining 1 tablespoon oil to the pan. Cook, stirring occasionally, for about 4 minutes, or until golden brown. Cook the garlic for about 30 seconds, or until it becomes aromatic, after adding it to the remaining tablespoon of flour.

After adding the Marsala, simmer for about a minute, or until it reduces by half, scraping off any browned parts from the pan. Simmer for three to four minutes, or until the broth and thyme have slightly thickened. Swirl in the remaining tablespoon of butter to melt and mix it in. Take off the heat source. 

Step:No:05

Serve the chicken with sauce: Return the chicken to the pan and drizzle it with sauce, or cover the chicken with sauce on a tray. If using, garnish with parsley and serve.
