As you may already be aware, food is not actually fried in an air fryer. In essence, these are extremely strong convection ovens that circulate hot air to give your meal a perfectly crispy, golden brown finish. Additionally, an air fryer heats up quickly due to its smaller size compared to a traditional oven. When you plug it in and turn it on, the wings are ready to be turbo-cooked.
Ingredients:
For the wings:
- 3 pounds chicken wing drumettes and flats
- 3 teaspoons baking powder
- 2 teaspoons kosher salt
For the sauce:
- 2 tablespoons gochujang
- 2 tablespoons soy sauce
- 1 tablespoon rice wine vinegar
- 2 teaspoons sesame oil
- 1 teaspoon sugar
- 3 tablespoons butter, melted and kept warm
For the sesame mayonnaise dipping sauce:
- 1 cup mayonnaise
- 1 tablespoon toasted sesame oil
- 3/4 teaspoon sugar
- 1/8 teaspoon Sriracha
- To garnish:
- Thinly sliced scallions, for garnish
- Toasted sesame seeds, for garnish
- Thin spears of cucumber
- Thin slices of radish

To rest and season the wings, pat them dry if necessary. Add the wings to a large bowl and toss to coat evenly with the baking powder and salt.
Arrange the wings in a single layer around the bowl and place it in the refrigerator, uncovered, for a minimum of 6 hours and a maximum of 24 hours.

Turn the air fryer on to 380°F.

Air fried the wings: Open the drawer and stuff as many wings (about 1-1/2 pounds, or half the amount) as you can without overcrowding it in my 4.4-quart air fryer. Shut the drawer. Bake for 25 minutes, rotating the wings every 5 minutes by shaking the drawer.Step:No:04
Make the sauce: Prepare the sauce while the wings are cooking. Combine the gochujang, sugar, sesame oil, soy sauce, and rice wine vinegar in a medium-sized bowl. Put aside.

To prepare the sesame mayonnaise, combine the mayonnaise, sugar, sriracha, and sesame oil in a small bowl and whisk until smooth. Put aside.

Raise the temperature in the air fryer: After the wings have been cooked for 25 minutes, turn the air fryer up to 400°F. For a further five minutes, cook the wings. They become well browned and crispy as a result.

Mix the melted butter with the sauce before serving the wings. The heat from the wings will remelt the butter if it solidifies. Place the wings in a large bowl, cover the wings with half of the sauce, and toss to coat.

To serve and consume, move the dish to a tray and top with sesame seeds and scallions, if preferred. Serve right away with the radishes, cucumbers, and sesame mayonnaise on the side for dipping.

Cook the remaining wings.
Bring your air fryer's temperature down to 380°F. Go back and repeat steps two and four. Add the remaining sauce and toss them.
