Middle Eastern street cuisine shawarma, which is made of marinated meats such lamb, beef, or chicken, is immensely popular. It's becoming more and more popular in the US, and you can now make it at home with the most incredible spice blend and a few basic cupboard ingredients.
Ingredients:
- 2 tablespoons olive oil
- 1 tablespoon water
- 1 tablespoon lemon zest
- 1 tablespoon freshly squeezed lemon juice
- 3 cloves garlic, minced
- 2 teaspoons ground coriander
- 2 teaspoons sweet paprika
- 2 teaspoons ground cumin
- 1 teaspoon ground turmeric
- ½ teaspoon ground cinnamon
- ½ teaspoon ground ginger
- ¼ teaspoon cayenne pepper
- ¼ teaspoon ground cardamom
- Kosher salt and freshly ground black pepper, to taste
- 2 pounds boneless, skinless chicken thighs
- 1 ½ tablespoons canola oil

Mix the olive oil, water, lemon zest, lemon juice, garlic, paprika, coriander, cumin, turmeric, cinnamon, ginger, cardamom, cayenne, and 1/2 teaspoon each of salt and pepper in a medium-sized bowl.

Combine the chicken and olive oil combination in a large bowl or a gallon-sized Ziploc bag; marinate for at least two hours to overnight, rotating the bag occasionally. After the chicken has marinated, drain it.
