Easy Chicken Carne Asada Burrito Bowls

 Do you recall the recipe for carne asada I shared? Who's got the amazing marinade made of cilantro, olive oil, soy sauce, orange and lime juice, garlic, jalapeño, and cumin?

Ingredients:

FOR THE CARNE ASADA

  1. ½ cup chopped fresh cilantro leaves
  2. ⅓ cup olive oil
  3. ¼ cup reduced sodium soy sauce
  4. ¼ cup freshly squeezed orange juice
  5. 2 tablespoons freshly squeezed lime juice
  6. 4 cloves garlic, minced
  7. 1 jalapeno, seeded and diced
  8. 1 teaspoon ground cumin
  9. Kosher salt and freshly ground black pepper, to taste
  10. 1 ½ pounds flank steak

FOR THE CILANTRO LIME VINAIGRETTE

  1. 1 cup loosely packed cilantro, stems removed
  2. ½ cup plain Greek yogurt
  3. 2 cloves garlic
  4. 2 tablespoons freshly squeezed lime juice
  5. ¼ cup olive oil
  6. 2 tablespoons apple cider vinegar
  7. Kosher salt and freshly ground black pepper, to tase

FOR THE BURRITO BOWLS

  1. 1 cup farro
  2. 1 cup pico de gallo, homemade or store-bought
  3. 1 cup corn kernels, frozen, canned or roasted
  4. 1 avocado, halved, peeled, seeded and thinly sliced
  5. ½ cup fresh cilantro leaves
  6. 1 lime, cut into wedges


Instructions:

Step:No:01

Mix the cilantro, olive oil, soy sauce, lime juice, orange juice, jalapeño, cumin, garlic, and 1 teaspoon pepper in a medium-sized bowl. Reserve 1/2 cup of the mixture and keep it chilled until you're ready to serve.

Step:No:02

meat and the remaining cilantro mixture should be combined in a big dish or a gallon-sized Ziploc bag. Marinade the meat for at least 4 hours or overnight, shaking the bag from time to time. Once the meat has marinated, drain it.

Step:No:03

Grill at a medium-high temperature. After patting the steak dry on both sides with paper towels, season it to taste with salt and pepper.

Step:No:04

Place the steak on the grill and cook, turning it once, for a total of six minutes on each side for medium-rare. Give it five minutes to rest.

Step:No:05

Slicing the steak thinly against the grain, serve with the 1/2 cup of cilantro mixture that was set aside.

FOR THE CILANTRO LIME VINAIGRETTE

Step:No:01

In a food processor bowl, combine cilantro, Greek yogurt, garlic, and lime juice. Olive oil and vinegar should be added slowly while the engine is running to create an emulsified mixture. Season with salt and pepper to taste. Put aside.

FOR THE BURRITO BOWLS

Step:No:01

Follow the directions on the package to cook the farro. Separate into bowls. Add pico de gallo, corn, avocado, cilantro, and carne asada on top.

Step:No:02

Accompany with lime wedges and cilantro-lime vinaigrette.
