This tomato pasta sauce-based chicken pasta bake is a welcome departure from the typical creamy versions. It's cozy, filling, economical, and incredibly tasty—filled with bacon, sizzling seasoned chicken, and lots of cheese! Great whole supper that can be prepared in advance and frozen.
Ingredietns:
SEASONED CHICKEN
- 500g / 1 lb chicken thighs , cut into small bite size pieces (Note 1)
- 1/2 tsp cooking/kosher salt
- 1/4 tsp black pepper
- 1/2 tsp garlic powder
- 2 tsp Italian herb mix , any store bought type
PASTA BAKE
- 300g/10oz rigatoni (or penne, elbow macaroni, shells or similar)
- 2 tsp salt , for cooking pasta
- 5 slices streaky bacon
- 1/2 onion , finely chopped
- 2 garlic cloves , minced
- 1 1/2 tsp dried oregano
- 1/2 tsp chilli flakes / red pepper flakes
- 1/2 cup chardonnay or other dry white wine (Note 2)
- 2 tbsp tomato paste
- 700g / 24oz tomato passata (Note 3)
- 1/2 cup water
- 1 tsp cooking/kosher salt
- 1/2 tsp black pepper
- 3 tomatoes , cut into 8 wedges then halved
- 2 big handfuls baby spinach (or bite size kale)
- 2 cups mozzarella, shredded
- 1/2 cup (tightly packed) parmesan, finely shredded
Instructions:
Step:No:01
Set oven temperature to 180°C/350°F (fan 160°C).

Pasta should be cooked according to the recommendations on the package, using two teaspoons of salt and boiling water. After draining and giving it a quick wash with tap water, let it to cool while preparing the sauce.

Combine the ingredients for the seasoned chicken in a bowl.

To make bacon crispy, place it in a big, unheated nonstick pan (Note 2). Set the stove to medium-high heat. The bacon will cook in its own fat as the fat melts. Cook until lightly browned, then remove, leaving grease in the pan, and place onto paper towels. Cut into 1/3-inch (1-cm) pieces once cooled.

Sizzle chicken: If you don't have at least one tablespoon of olive oil, replace the bacon fat. Turn up the heat to high. Sauté the chicken for 3 minutes, or until the outside is lightly golden but the inside is still uncooked. Transfer with a slotted spoon into a bowl.

Sauce: In the same pan, sauté the onion and garlic for one minute, then add the oregano and chilli flakes. Cook onion for 2 minutes or until transparent. When the wine has mostly evaporated, add it and boil quickly for one to two minutes. To concentrate and enhance flavor, add tomato paste and heat for one minute. Pour in the passata and rinse the bottle with the water. Add the chicken (with all of its juices on the plate), salt, and pepper. Stir, then boil on medium for five minutes.

Toss in the pasta, bacon, tomato, and baby spinach. Throw accurately.

Transfer to a 23 x 33cm/9 x 13" pan after assembly. Add mozzarella and then parmesan on top. Bake for 25 minutes, or until melted and somewhat brown.Step:No:09
