Ingredients:
EGG SANDWICH FILLING:
- 6 soft boiled eggs , at room temperature (Note 1)
- 1 tbsp whole egg mayonnaise (S&W brand best, Note 2)
- 2 tsp dijon mustard
- 2 tsp finely chopped chives (sub green onion)
- 1/2 tsp black pepper
- 1/8 tsp cooking/kosher salt (yes really, that's all!)
SANDWICH:
Step:No:01
Egg mash: Put the eggs in a bowl and use a fork to smash them. Once they're mostly broken up, mash them up pretty well with a potato masher. Creamier filling results from smaller egg white pieces.
Step:No:02
Filling: swirl together the remaining filling ingredients with a gentle swirl. It's strange how little salt eggs can take, so taste and add more if needed, but proceed with caution!

Construct a sandwich: Spread the bread with butter. Distribute the contents evenly from edge to edge among the four pieces of bread. Trim crusts if desired, then slice however you like. (Note 4 advice)
