Tacos made with cheesy, crunchy, and incredibly crispy chicken that have been roasted to perfection. A very simple evening supper!
Ingredients:
- 2 ½ tablespoons canola oil, divided
- 1 pound ground chicken
- ½ medium sweet onion, diced
- 3 cloves garlic, minced
- 1 (4.5-ounce) can chopped green chiles
- 1 ½ teaspoons chili powder
- ½ teaspoon smoked paprika
- ½ teaspoon dried oregano
- ½ teaspoon ground cumin
- ¼ cup chopped fresh cilantro leaves
- 1 tablespoon freshly squeezed lime juice
- Kosher salt and freshly ground black pepper, to taste
- 1 ½ cups shredded Mexican cheese blend, divided
- 8 flour or corn tortillas, warmed

Set oven temperature to 425°F. Apply a thin layer of oil or nonstick spray on a baking sheet.

In a big cast iron skillet, heat up one tablespoon of canola oil over medium-high heat. Add the ground chicken, onion, and garlic. Cook for 3 to 5 minutes, or until browned, crumbling the chicken occasionally; drain any extra grease.Step:No:03
Add the green chilies, cumin, paprika, chili powder, and oregano and stir until aromatic, one to two minutes.

Take off the heat. Add the lime juice and cilantro, and season with salt and pepper to taste. Add one cup of cheese and stir until fully mixed.Step:No:05
Spread the chicken mixture on half of each tortilla, one at a time. Top with a spoonful of cheese and fold over to seal. To create eight tacos, repeat with the remaining tortillas.Step:No:06
Tacos should be arranged on the ready baking sheet in a single layer. Apply the final 1 1/2 tablespoons of canola oil on top.

Put in the oven and bake for 12 to 15 minutes, or until toasted and crispy.Step:No:08
