These egg rolls from the Southwest aren't like the ones you usually get! A delicious snack may be made by stuffing small flour tortillas with a spicy chicken mixture that includes corn, black beans, cheese, and jalapeños, and deep-frying them until they get crispy.
Ingredients:
- 2 tablespoons vegetable oil, divided
- 1 skinless, boneless chicken breast half
- 2 tablespoons minced green onion
- 2 tablespoons minced red bell pepper
- ⅓ cup frozen corn kernels
- ¼ cup black beans, rinsed and drained
- 2 tablespoons frozen chopped spinach, thawed and drained
- 2 tablespoons diced jalapeño peppers
- ½ tablespoon minced fresh parsley
- ½ teaspoon ground cumin
- ½ teaspoon chili powder
- ⅓ teaspoon salt
- 1 pinch ground cayenne pepper
- ¾ cup shredded Monterey Jack cheese
- 5 (6 inch) flour tortillas
- 1 quart oil for deep frying
Instructions:
Step:No:01
Coat the chicken breast with one tablespoon of vegetable oil. Cook chicken in a medium saucepan over medium heat for about 5 minutes on each side, or until meat is no longer pink and fluids run clear. When placed in the center, an instant-read thermometer should read at least 165 degrees Fahrenheit (74 degrees Celsius). Take off the heat and place aside.
Step:No:02
In the saucepan, heat the remaining 1 tablespoon of vegetable oil over medium heat. Add bell pepper and green onion and stir. Saute and stir for approximately five minutes, or until soft.Step:No:03
Chop the chicken and add it to the pan along with the bell pepper and green onion. Add the jalapeño peppers, corn, black beans, spinach, cumin, chili powder, salt, and cayenne pepper and stir. Stir and cook for 5 minutes, or until fully combined and soft. Take off the heat and mix in the melted Monterey Jack cheese.
Step:No:04
With a fresh, somewhat damp cloth, wrap each tortilla. For about a minute, or until heated and pliable, microwave on high.
Step:No:05
Even portions of the mixture should be spooned into each tortilla. Roll the tortillas tightly around the mixture after folding the ends. Use toothpicks to secure. Put in the freezer after arranging in a medium dish and covering with plastic wrap. For at least four hours, freeze.
Step:No:06
To deep-fry, heat oil in a big, deep skillet to 375 degrees Fahrenheit (190 degrees Celsius). Fry frozen, filled tortillas for approximately ten minutes on each side, or until they turn a dark golden brown. To serve, drain on paper towels.
