Ingredients:
- 1/2 pound fresh chorizo
- 1/2 poblano pepper, chopped
- 1/2 yellow onion, chopped
- 1/2 red bell pepper, chopped
- 2 Yukon gold potatoes, cut into bite-sized pieces
- 4 large eggs
- 1/3 cup half-and-half
- salt and pepper to taste
- 2 tablespoons butter or olive oil
- 1/4 cup shredded cheese, any kind
- 4 burrito-sized flour tortillas

A big skillet should be heated to medium heat. Add the red bell pepper, onions, poblano pepper, and chorizo. Cook for 5 to 7 minutes, or until vegetables are soft. Take the skillet off of the burner.

Potatoes should be cooked in a microwave-safe basin with a tiny quantity of water for 7 to 10 minutes, stirring halfway through. Then, drain. Add potatoes to the combination of chorizo.Step:No:03

In a skillet over medium heat, melt butter. Add the egg mixture and scramble for three minutes, or until the eggs are done. Take the eggs off of the burner. Add the cheese and fold.Step:No:05
Place a line of the chorizo mixture in the center of the tortilla, followed by a layer of scrambled eggs. Overlap the filling by folding the tortilla's opposite sides.
