Best Chicken Caesar Salad

If you enjoy fries in your salad, try this crispy potato Caesar salad. This dish in a bowl combines crunchy crushed tater tot croutons, crispy chicken cutlets, and a homemade bottled Caesar dressing.

Ingredients:

  1. 8 ounces frozen crispy chicken cutlets
  2. cooking spray
  3. 2 1/2 cups frozen bite-sized potato nuggets (such as Tater Tots®)
  4. 2 ounces Parmesan cheese, freshly grated with a Microplane, divided, plus more for garnish (about 1 cup)
  5. 1 cup Caesar dressing
  6. 1 teaspoon fresh lemon zest
  7. 1 teaspoon anchovy paste
  8. 1 teaspoon grated fresh garlic
  9. 1/2 teaspoon freshly ground black pepper, divided
  10. 1/4 teaspoon kosher salt
  11. 4 cups finely chopped Romaine lettuce
  12. 1 tablespoon white balsamic vinegar

Instructions:

Step:No:01

Bake at 425 degrees Fahrenheit (220 degrees Celsius). Place two shelves close to the oven's center. Cooking spray should be used on a baking sheet before adding frozen chicken filets to it.

Step:No:02

Bake the filets on the lower-center shelf of a preheated oven until they are hot and crisp, about 20 minutes; flip them over halfway through. Once the filets have cooled down sufficiently, slice them into little pieces.

Step:No:03

In the meantime, spread tater tots evenly across a large rimmed baking sheet lined with parchment paper.

Step:No:04

Bake for 8 to 10 minutes, or until the tots are soft and gently cooked, on the higher middle shelf of a preheated oven. Take out of the oven. Evenly coat the bottom of a cup with cooking spray. Using a cup, flatten each tater tot into a disk.

Step:No:05

Put it back in the oven and bake for 15 to 20 minutes, or until golden brown and crispy. Take out of the oven once more, then top with half a cup of Parmesan cheese.

Step:No:06

Rebake for a minute or so, or until cheese is melted. Leave for about five minutes to cool.

Step:No:07

In the meantime, combine the Caesar dressing, 1/4 teaspoon black pepper, garlic, lemon juice, anchovy paste, and salt in a bowl and whisk until smooth.

Step:No:08

Combine the chicken, lettuce, remaining 1/2 cup Parmesan cheese, and 1/4 teaspoon black pepper and toss thoroughly. After adding half of the dressing to the salad mix, toss to coat everything evenly. Add the cooled tater tots and mix thoroughly.

Step:No:09

After transferring to a serving tray, top with additional Parmesan cheese and a sprinkle of white balsamic vinegar. Serve right away.
